Step 1Heat the coconut oil in a pan over medium heat.
Step 2Add the clean shrimp and minced garlic. Add the old bay, chipotle, and cayenne seasoning. Cook them until you notice a pinky-peach color, and then remove the pan from the heat.
Step 3Place the spinach and kale mix in different bowls, and add some chopped cucumber. Also, add some chopped avocado and lime juice to the mixture. Now chop up the shrimp and add it to the mixture.

The first time I prepared this dish, I had my sister’s kids over for dinner. To be honest, I wasn’t sure if they’d like it. I was waiting for their typical “oh gross!” response. Boy, was I wrong! They even asked for more.

Ingredients:

  • 1 little salmon or trout fillet (4.4 oz)
  • 1/2 large packet of frozen or fresh spinach (4.4 oz)
  • 1 tablespoon of coconut milk or heavy whipping cream
  • 2 tablespoons of ghee, extra virgin olive oil, or coconut oil
  • 1 serving of Hollandaise sauce
  • Fresh ground black pepper
  • Some salt

Instructions:

Step 1Preheat the oven to about 400oF. Put the salmon in a baking tray and sprinkle with half of the ghee, extra virgin olive oil, or coconut oil. Add some pepper and salt, place in the oven, and cook for about 20 minutes.
Step 2Meanwhile, prep the creamy spinach by washing it and placing it in a salad spinner to remove excess water (you could also pat it dry with a paper towel).
Step 3Grease a frying pan with the other half of the ghee, olive oil, or coconut oil, and then heat it over medium heat. Add the spinach and cook for around 5 minutes while stirring. Don’t forget to season with salt.
