Small steaming vessels are recommended. It might be anything from shallow heat-proof tea cups to tart or nonstick muffins pans. To keep the filling from sticking, brush them with oil.
We usually avoid using paper muffin cups since some cake sticks to them. It’s a bit of a waste! Fill tart pans to approximately 80%, muffin cups to about 70%, or tiny teacups to 80%. Just be careful not to overfill the containers! There must be sufficient space for them to rise and maintain their form. Let’s get to the recipe, shall we?
Instructions For The Fa Gao Recipe
In a medium bowl, combine the small grain of white rice and 2 inches of water. Allow the rice to soak overnight in the dish covered with an upturned plate. The flour and the leftover 1/3 cup sugar are then added. Blend until all ingredients are fully combined, and the result resembles a thin pancake batter. Place the ingredients in a large mixing basin. Cover with an inverted plate and set aside for around 2 hours until the mixture has doubled in volume. (We microwaved ours with a huge cup of hot water next to it in a closed microwave.)
Brush a little oil coating on your steaming containers (small teacups, tart pans, or muffin tins). The rice mix will be frothy and fluffy in appearance. Combine the salt, red food coloring, and baking powder in a mixing bowl (if using). To blend, whisk everything together thoroughly. Fill every oiled steaming pot to about 70%–80% capacity, then top with dried fruits and raisins. Set aside to cool while you heat the steamer’s water.
Fill the steamer with water at least 2 – 3 inches/7.5 cm deep. Heat the water over medium-high heat until it boils. Transfer the pancakes to the steamer after the water inside the steamer has reached a boil. Cover and steam for 25 minutes over high heat. Turn the heat down after 25 minutes and leave the cakes in the steam for five min with the lid still on. During steaming, do not lift the lid.
Warm cakes are best enjoyed. Refrigerate or freeze until ready to use, then steam to reheat. To avoid leftover cakes from drying out, store them in an airtight container.
